Baking Skillz...

I have never been one to shy away from the kitchen, but it's a special treat for me when I get to bake a cake from scratch. I'm currently procrastinating  in the middle of completing my 100 in 1001 goal list and one of the first goals I tackled was successfully baking a rainbow cake.

I've seen many variations of rainbow cakes and even some that are so far beyond what I feel I have the ability to create, but I had to give it a try at least once!






This was honestly my second attempt. My first attempt was using a Martha Stewart recipe for her version of a rainbow cake. The layers on my first attempt were so thin and the cake tasted aweful. I decided to simply use a recipe for a cake I had previously test and loved and the result was this vanilla buttermilk rainbow cake. This cake was time consuming, MASSIVE and was a challenge to layer without it toppling over (definitely use straws), but definitely worth the trouble! I was a bit disappointed with some of the coloring. I ran short on red so I figured it would be okay to use pink gel food coloring to make the red richer. Instead of brightening the red, it simply came out pink. The purple was also gel food coloring that turned out to be a bit more on the blue side than I would have liked. Oh well!


I doubled the recipe of the cake linked below. I highly recommend this recipe!

  6. Julia - I definitely recommend that recipe! It worked out to be a perfect rainbow cake. :) Just remember to use straws to stabilize everything. It will be huge!
